Postpartum Oatmeal Breakfast Cookies (Easy 10-Minute Recipe)

These simple oatmeal breakfast cookies are one of my favorite postpartum snacks to make for families. They’re quick, nourishing, and perfect for those early days when eating with one hand is the entire goal. You can prep a batch in minutes and grab them throughout the day — especially during cluster feeding or the early-morning nap stretch.

They’re also packed with fiber, healthy fats, and complex carbs to support stable energy and postpartum healing.

Ingredients

  • 1 ¼ cup gluten-free rolled oats

  • 1 ripe medium banana, mashed (about 3.2 oz)

  • ¼ cup unsweetened applesauce

  • 2 tbsp almond butter (unsweetened)

  • 1 egg (or substitute with 1 flax egg)

  • 1 tsp vanilla extract

  • ½ tsp ground cinnamon

  • ¼ cup chocolate chips (regular or dairy-free)

Instructions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.

  2. In a medium bowl, combine oats, mashed banana, applesauce, almond butter, egg, vanilla, cinnamon, and chocolate chips. Mix until fully combined.

  3. Scoop 1 ½–2 tbsp portions onto the baking sheet. Flatten each cookie to about ½ inch thick.

  4. Bake for 10 minutes, or until edges are lightly golden. Let cool completely.
